The lamb stew is made with leg meat and lamb skirt. It is a characteristic food of civilizations with a traditional livestock dedication, such as the Mediterranean. There are multiple recipes and all equally tasty. This one shown was made by deep-frying the meat in olive oil. Afterwards, it is removed from the pan and, in the resulting oil, garlic, onions and pepper are sautéed. Aromatic herbs are also added, especially rosemary and thyme. After a minutes, tomato is added to the pot. When the vegetables are stewed, the meat is added and a last stew with white wine is given.
