The city of Madrid celebrates the day of its patron saint, the Virgin of Almudena, and as is tradition, the pastry shops are filled with Coronas de la Almudena, an artisanal sweet with a spongy crumb like that of the roscon, but without the characteristic orange blossom water. The history of the Almudena crown dates back to 1978 when the association of confectioners wanted to have a typical dessert for this time .
