VIANI, CUNDINAMARCA - AUGUST 18: Traditional sugarcane production is continuing in Colombia despite the coronavirus (COVID-19) pandemic in Colombia. In the small village of Viani close to the capital Bogota people work non stop on sugarcane production despite the pandemic. Unrefined cane sugar called “Panela” in Colombia is an important business for thousands of villagers. Traditionally villagers cut and press sugarcane through small rural mills where sugarcane is juiced. Later it's boiled until it becomes a brick of molasses. Panela producer Miguel Dario Gonzales said they carry sugar cane with horses in the production areas. "First the sugar cane is cut, it is brought by horses, it is piled up, the grinding process comes to extract the juice, then it is cooked well and when it is at the right point the panela is made," he said. Unrefined cane sugar is a sweet found across South America.
